1.To dry fish, you will need either a drying table or a place to hang them.

either or不是...就是..., ...或...

例句：He is either a clerk or a worker. I am not sure.
      他不是职员便是工人。我不大清楚。

2.If a table is used, it should have a top made of wire screen or thin pieces of wood with space between each piece.

be made of用...造成(用于原材料显而易见的场合)

例句：The handle of this knife is made of horn.
      这把刀的柄是用角制成的。

3.Build a small smoky fire under the drying table for the first day to keep the flies away.

keep away(使)不接近

例句：Danger!Thin ice.Keep away.
      危险!冰很薄, 别上去。

      Would you keep that dog away, please?
      请将那只狗赶远些, 好吗?

4.Turn the fish over every other day.

every other隔, 间

例句：She visited him in hospital every other day.
      她每隔一天到医院去看望他。

      We have English lessons every other day.
      我们每隔一天有英语课。
